Caparelli Olive Oil

We try our best to have a vegetable at dinner time around here.  My personal favorite (and the kid's as well) is when we saute our fresh vegetables in a little olive oil and add a bit of salt or parmesan cheese.  I love zucchini or yellow squash that way.  Yum.  We are big fans of cooking our vegetables in olive oil because it's a lot healthier than butter.

They sent me a little blue glass along with three different kinds of olive oil.  Why the blue glass?  It fits in the palm of your hand so the oil warms and releases its aroma.  Then the testing begins.

You SWIRL first, releasing the aroma.  Then you SNIFF, inhaling deeply.  Next you SLURP, taking note of the tastes and sensation.  Lastly, you SWALLOW.  A good olive oil should leave your mouth with no aftertaste.  

The three kinds of olive oil were quite different.  The "Organic" had a little more of a peppery taste to me.  "Il Numerato" was more smooth and less acidic.  The "Premium 100% Italian" was my favorite.  It had a more robust flavor.
